Vegan Crêpes

Method:

  1. Mix the flour, sugar, baking powder, bicarbonate of soda and salt in a bowl. Whisk in the almond milk and oil. Set the batter aside for 10 minutes.
  2. Lightly oil a non-stick frying pan placed over medium heat. Pour a big spoon of the batter into the pan, and using the back of your ladle, make circles to expand the mixture to the edge of the pan. 
  3. Cook for 3 minutes then flip. Repeat until the mixture is used up. 
  4. Fill with greek yoghurt and top with fresh berries and a dusting of icing sugar.

Ingredients:

600ml Almond Breeze unsweetened

240g plain flour

50ml oil

1 tbsp sugar

1/2 tsp salt 

1 tsp baking powder

1/2 tsp bicarbonate of soda 

 

Topping and fillings:

Fresh berries 

Greek yoghurt 

Maple Syrup

Icing sugar
